Galangal

My favorite ingredient recently. Galangal is a rhizome and resembles ginger but its taste/texture is completely different. It’s very hard to slice even with a sharp knife, unlike ginger.

It’s an essential ingredient in Thai cooking, for example Tom Yum Soup, Tom Kha Gai. Do you use galangal in your cooking?

Earlier this year, when I was home in Penang, I chanced upon a biscuits vendor at the morning wet market. He sells all sorts of biscuits in giant tins, and many of them were my childhood favorites. This is one of them. Another one is this.

This is my homemade Penang Assam Laksa, a dish that I grew up eating. I have two Assam Laksa recipes here and here. Both are my family’s recipes and equally good. They pretty much taste the same but the measurements are slightly different. Enjoy!
