My favorite ingredient recently. Galangal is a rhizome and resembles ginger but its taste/texture is completely different. It’s very hard to slice even with a sharp knife, unlike ginger. It’s an essential ingredient in Thai cooking, for example Tom Yum Soup, Tom Kha Gai. Do you use galangal in your cooking?
